Content : This book is an ode to one of the most famous markets in the world: Tsukiji. It moved in 2017, so it was a good opportunity to celebrate this part of Japanese heritage, and a high place of gastronomy. Photos taken by Frédéric Georgens are a precious testimony of more than 15 years of reports throughout the alleys of this 20 hectares market. Authors are both university teachers, one in Geography, the other in History. They put the market back in its social and economical context and enlighten readers on its long history, since its creation in 1935 until its disappearance in 2017, following numerous polemics, to leave space for Tokyo’s Olympic Games of 2020.
